Crêpes with ice and berry compote

Ingredients for 4 persons:

4 servings Protira naturel

A bit of salt

1 table spoon powdered sugar

8.80 oz plant based milk

3.52 ozwater

2 table spoons plant based butter

1 tablespoon cognac (optional)

Oil

0.22lb of blueberries

0.22lb of raspberries

4 table spoons maple syrup

1.10lb blueberry or raspberry ice

Preparation:

Put the Protira, the salt and the sugar in a bowl. Add the milk, the water, the butter and the cognac (optional). Mix everything until you have a whipped batter. Leave for 15 minutes.

Prepare in the meantime the filling. Heat the blueberries, the raspberries and the maple syrup in a small pan until the fruit is soft. Take of the heat but keep warm.

Grease a frying pan with a diameter of 50.8 inch with the oil and warm up on a medium heat. Pour just enough batter to cover the bottom of the pan. Rotate the pan so the batter will be spread equally. Bake the pancake golden brown. Twist the pancake to the other side and bake the same.

Spread some scoops of ice over the pancakes and fold them in half. Pour the berry compote of it.

Tip

Blue, red or black berries contain a lot of vitamin C which mean they give you a lot of energy. And this is exactly what you need during the winter months.
